George C. Fahey, Jr. Professional Biography

George C. Fahey, Jr. is Professor Emeritus of Animal Sciences, Kraft Foods Endowed Professor Emeritus of Nutritional Sciences, and University Scholar. He has served on the faculty since 1976 and has held research, teaching, and administrative appointments. As Emeritus Professor, he holds a 0% time appointment and advises a Research Associate and a Laboratory Technician. He has advised nearly 100 graduate students and postdoctoral research associates to the successful completion of their educational programs. His research is in the area of comparative nutrition, specifically carbohydrates such as dietary fibers, oligosaccharides, and resistant starches and how they affect glycemic control, gastrointestinal tract health, fermentative events, and gut microbiota modulation in pet animals and humans. He has published nearly 400 books, book chapters, and journal articles, and has won many awards from his Department, College, University, scientific societies (American Society of Animal Science [ASAS] and American Society of Nutrition [ASN]), and international organizations (Australian government and the Canadian Feed Association). In 2016, he was named an ASN Fellow and won the Morrison Award, the highest honor bestowed by ASAS. He continues to be heavily involved in the Companion Animal program in the Department of Animal Sciences at the University of Illinois.
